He picks some pinot early and some later, and ferments them separately to monitor their development. The selected lots for the final blend created a balanced wine with intense flavors that will age five years or more. This delicious pinot offers a harmonious blend of black cherry, blackberry, and plum flavors with tangy notes of raspberry and bright red cherry. Beautifully balanced, it’s weaved with a tasty thread of allspice and earth. Pair it with special dishes like prime rib, filet mignon, herb-crusted rack of lamb, or grilled ahi.
