This big, ripe cabernet sauvignon offers delicious aromas and flavors of blackberries, cassis, and plums, nicely balanced by zingy red fruit notes and white pepper. It’s a bold cabernet that’s high in alcohol at 16.1 percent, but it’s not immediately apparent in this well-balanced red. This is winemaker Augie Hug’s first year working with this vineyard in the Chimney Rock area in west-side Paso wine country. Hug recommends enjoying it with a spicy dry-rubbed flat iron steak. It would also pair quite handsomely with wild game, or a grilled rib-eye steak. Available at Hug’s tasting room on Hwy. 46 East, it’s a very good buy for cabernet at $35 retail.
