Once the fire reaches optimal cooking temperature, Raymond begins preparing the entree while appetizers, including Rays Own Brand sausage, sweet breads, and garlic bread are served. A walk through the buffet line provides guests with all the accompanying side dishes including fruit and green salads, chili, and San Luis Sourdough bread. At the end of the line guests can sample cooked meat, regardless of the individual's meal selection. Raymond personally greets all guests at the end of the line, and serves the entree of their choice.
