Taste of the South: The Hatch in Paso Robles is heating up this winter! Thursday through Saturday from 10 p.m. to midnight, get your hands on late-night munchies like bourbon and greens, housemade maple leaf duck sausage, rooster wings tossed in fermented hot sauce, and old-school meatloaf with a twist. Oh, and cocktail hour bites are available Monday through Saturday from 3 till 5 p.m. and include a killer pickle plate, Southern Brussels sprouts, and a rotisserie chicken sando brined with black tea and wood-fired the old fashioned way (835 13th St. in Paso Robles; hatchpasorobles.com for reservations) ... Word on the street: Fromagerie Sophie has some killer pâté you need in your life. Hopefully the holidays have not destroyed their supply. Try it for yourself or get your hands on exotic cheeses and education by stopping by the quaint shop at 1129 Garden St. in SLO. How's that for a New Year's resolution?

Spring wine bounty

Save the date! The 45-plus members of the Paso Robles Rhone Rangers invite you to dive into a delicious day of Rhone wine seminars, gourmet goodies crafted by Chef Jeffery Scott, and a smashing grand tasting. The cup floweth over at Broken Earth Winery in Paso Robles this Feb. 14 for a not-to-be-missed celebration of Rhone varietals (for tickets and updated information, visit the group's Facebook page) ... White wine lovers should be looking forward to another day of crashing waves and clinking glasses. The International Chardonnay Symposium is set for May 12 through 14 in Pismo Beach, so save the date and look forward to panels, cheeses, and fine golden wine. P.S. Locally famous

Rock stars: Sunset magazine featured open-air eatery Chop Street in its latest feature on Pismo Beach for a reason. The food is epic, and the price tag won't kill ya! From-scratch pot pies meet an eclectic range of local beer and wine, and gluten-free folks need not worry. Try Chop Street's pulled pork sliders with a side of tater tots topped with bacon, cheddar, and buttermilk ranch (779 Price St., Pismo Beach; chopst.com) ... Have you heard about Kandarian Organic Farms yet? If not, you will shortly. The Los Osos-based farm produces exquisite organically certified ancient grains and seeds, herbs, spices, peas, beans, and gourmet pollens. Go to the website to try out awesome recipes like millet-stuffed bell peppers spilling over with black beans. You can also buy triticale, chia seeds, and farro at the online store (kandarian-organic-farms.highwire.com). How modern!
